Homemade Mooncakes by US

Once again, Mooncake's Festival is around the corner
I believe most of us will buy ourself a box of mooncake at least =)
I wanna something special for this year
Xiong, Sisi and I decided to make ourself few mooncakes instead XD

The day began with a yellowish SKY (because we start make it around evening =.=)
Pick Up our little brother (SISI) from Bm lee tuition centre
Have a nice chat with Bm lee - a marvellous tuition teacher =)
Headed to the bakery shop for our Ingredients 
We followed a recipe from the internet and WE FAILED
Never give up
So, we tried it again on the next day =)
This time we followed the RECIPE from the bakery's shop
AND WE SUCCESS!!
NOT THAT AMAZE
but still tasty for me at least!!!
Xiong put most effort in there!!!




Here is the recipe I wanna share with u guys =)


Snowy Mooncakes
(Around 7 pieces)

Skin

Ingredient A

  • 180g cooked glutinous rice flour (ko fun)
  • 300g Icing sugar (Through sieve)


Ingredient B

  • 240ml cold water
  • few drops of green colouring
  • a little bit of pandan juice
  • few drops of banana essences


Ingredient C


  • Shortening 25g


Fillings

  • 1kg Lotus paste
  • 100g roasted seeds


Procedures

  1. Mix ingredient A nicely and slowly added ingredient B
  2. Then, Mix Shortening into the dough until smoothly (keep it there for 15minutes)
  3. Divide dough into small portions according to the size of your mould ( 60g ) and then wrap up the lotus paste(100gm) mixture. For lotus paste mixture, mix all together until evenly mixed.
  4. Press into a mooncake mould and then knock it out.
  5. Serve chilled.
